Our first Meatless Monday recipe comes courtesy of Roughage Eatery restaurant here in Winnipeg. They’ve shared with us their personal favourite tofu scramble recipe, that is sure to leave you craving more!

 

Roughage Eatery’s Tofu Scramble

Ingredients:

  • 1 brick of extra firm tofu OR firm tofu crumbled into bite sized pieces
  • ½ medium onion chopped
  • 2 garlic cloves minced
  • 2 tbsp olive oil
  • 2 tbsp nutritional yeast
  • 1 tbsp soy sauce or tamari
  • 2 tsp Dijon mustard
  • ½ tsp ground turmeric
  • ¼ tsp sage
  • ¼ tsp basil
  • ¼ tsp marjoram or oregano
  • salt/pepper to taste
  • 1 medium tomato chopped
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach

Directions:

  1. In a medium bowl, combine the nutritional yeast, soy sauce, Dijon mustard, turmeric and spices. Mix well. Add in the tofu and mix again until all tofu is coated. Let sit for 5-10 minutes to marinate.
  2. Saute the onion and garlic with the olive oil in a skillet until tender. Add in mushrooms and saute until browned.
  3. Add the tofu mixture to the skillet. Cook for 5-7 minutes, or until tofu starts to brown in the pan.
  4. Turn off the heat and add the tomato and spinach to the skillet, mixing in well. Let sit for a couple of minutes to allow the remaining heat to cook the spinach and tomato.

Serve with your favourite side, or enjoy it all on it’s own. Pairs great with toast and coffee.
